Have you heard of MealBaby? It’s a meal registry website for anyone who just had a baby, is recovering from surgery/illness or anyone who just wants to organize meals for friends ! I was recently invited to participate in a MealBaby meal registry for my good friend Sabrina, who just had her second baby, a girl, a few weeks ago. I love the concept of a meal registry for someone who just had a baby – its the perfect excuse to visit the mom, see the baby and bring over some good eats for your friends to enjoy. When I found out about it, I set up one for my BFF Michele who just had twins. Bringing home cooked meals to your friends who are new moms is an awesome way to show you care.
So I scoured the internet trying to find the perfect meal for Sabrina, her husband and their baby boy, Raffi – I texted with Sabrina giving her a few options and she picked enchiladas – I was so excited to try out Mama Pea’s: One Pan Roasted Sweet Potato & Black Bean Enchiladas. She just came out with her new cookbook & I am obsessed.
I am seriously in love with these enchiladas because they are jam packed with so many vegetables, not to mention great flavor, protein and fiber as well. It’s a nice little meal that’s easy to make and many of the ingredients are likely already in your pantry {i love it when that happens too!}
INGREDIENTS
Enchilada Filling:
- 5 medium sweet potatoes, peeled and diced (3 cups)
- 1 medium yellow onion, diced
- 1 15-ounce can fire-roasted diced tomatoes, drained
- 2 cups organic salsa
- 2 teaspoons garlic, minced
- 1 15-ounce can black beans, drained and rinsed
Enchilada Sauce:
- 1 15-ounce can tomato sauce
- 1 1⁄2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- salt and pepper to taste
Enchiladas:
- 10 corn tortillas, warmed
- 1⁄2 cup shredded organic cheddar cheese
DIRECTIONS
- Preheat oven to 450*Grease a 13 x 9 casserole dish with cooking spray or oil.
- Place sweet potatoes in the casserole dish, roast for 10 minutes. Stir, add onions to the dish and return to the oven for another 10 minutes.
- While sweet potatoes and onions are roasting, whisk tomato sauce, broth, chili powder, garlic powder, onion powder and oregano together in a medium bowl. Season with salt and pepper to taste, set aside
- Remove sweet potatoes and onions from the casserole dish and place in a large bowl. Add tomatoes, salsa, garlic and black beans, and mash all filling ingredients together with a potato masher until well combined.
- Reduce oven temperature to 350*
- Pour 1 cup of the sauce in the bottom of the casserole dish. Fill tortillas with filling, roll and pack together, seam side down, in the casserole dish. Top with remaining sauce and cheese. Bake for 25 to 30 minutes, or until cheese is melted and sauce is bubbly.
- Garnish with guacamole, olives and cilantro, if desired.
This is a great meal for an adult, but the sweet potatoes and black beans are a yummy combination for a toddler too – when I brought it over to Sabrina’s I kept the enchilada sauce separate so she could add on as much or as little as she wanted, as I thought it could be a little spicy for her son.
This meal was super yummy and was very filling. I love sweet potatoes and them combined with the beans and enchilada sauce, it was a great dinner. Not to mention it was quick and easy to make from start to finish – I can’t wait to make it again for the hubs!
Now, let’s get down to the REAL reason I went to visit Sabrina – to spend some quality time with baby Alessandra! Let me tell you that she is even more gorgeous in person than in all the photographs. She is so adorable and reminds me so much of her older brother when I got to meet him at 1 month old.
I seriously love her cheeks.

What a great idea! A meal registry is such a brilliant way to support new parents. And that recipe is so delicious! I made it once before and must add it to a menu soon.
