I have been on a MAJOR avocado kick lately. Not sure what it is, but I can’t get enough! Honestly, I used to be afraid to buy them. I could never get the timing right with when to eat them and they would always be too ripe {and all brown on the inside} or not ripe enough and then I would wait to long and miss its peak. I think getting the perfect avocado has something to do with the squish factor when picking it out at the store. It depends on if you want to eat it in the next day or two {get one with a little squish when you squeeze it} or if you are buying one or more for a few days from now {the firmer the better!}. I’ve also found that if I did get one with a little squish but changed my meal plan, putting it in the fridge keeps it from ripening as fast – my mom taught me that – Thanks Mom!

Anyways, now that I have mastered the art of buying the perfect avocado, I have been enjoying them in all my meals. My favorite avocado-inspired meals are:

Just a few of my favorite ways to include avocados in any meal {or snack!} during the day. Now imagine my delight when I found out there was a tasty way to include avocados in your dessert too.

Ladies & Gentleman, I give you – Avocado Chocolate Chip Cookies.

Avocado Chocolate Chip Cookies

  • 1 Hass avocado
  • 1 stick unsalted butter, room temperature
  • 1 1/2 cups dark brown sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 cups old fashioned oats
  • 1 3/4 cups semisweet chocolate chips

  1. Cut the avocado in half and scoop out the flesh into a  bowl. Add the butter and brown sugar. Cream together until fluffy.
  2. Add the eggs,  followed by the vanilla. Mix well until well combined.
  3. Add the flour, baking soda, salt and baking powder. Mix slowly then add the chocolate chips and oats. Be careful not to overmix . Place the dough in the fridge to chill for one hour.
  4. While the dough chills – Preheat the oven to 325*-  After the dough has chilled, scoop out spoonfuls of dough on the baking sheet and press down gently with your hand to flatten.
  5. Bake for 18 minutes, until golden brown. Repeat with remaining dough.

These came out really well. They were light & creamy. The combination of the oats & chocolate chips & avocado was a really good one. I personally was able to taste just a hint of the avocado, but I think that’s because I was looking for it {and because I knew it was in there}. They were super easy to make, came out very tasty & I love the addition of one of my favorite fruits.

I made these for the Philly Blogger lunch I went to this past weekend and they were a hit. I also made them for the Hubs, who loooooves chocolate chip cookies – he really liked them too. Seriously, what’s not to love – chocolate chip, oats, & avocado – it’s a winning combination if you ask me!

{Psst – Don’t tell the Hubs about the avocado. He didn’t even notice it in there-  It will be our little secret! }
