Meat Free Buffalo Wings & Dip

Hello and welcome to my first Meatless Monday!

You know about my deep love for cauliflower. This snack revolves around that.

Start off my cutting the cauliflower into little bite sized pieces.

Season the cauliflower with salt & cover with some EVOO in a bowl.

Bake at 450* for about 25 minutes until they are crispy.

While the cauliflower is in the oven it’s time to make the dip!

In a bowl I combined 1 cup of Greek yogurt, juice of 1/2 lemon, some chives, 2 garlic clove finely grated and some salt & pepper.

Top with some blue cheese crumbles for good measure.

Yum!

When the cauliflower is crispy transfer them to a bowl & top with about 1/2 cup of hot sauce. I am obsessed with the hot sauce I used the other day for my Broccoli Cheese Soup with a kick.

Should look a little something like this – for more of a kick, add more hot sauce!

Serve the cauliflower alongside the dip & Enjoy!

This is pretty much the perfect meatless dish to bring to any football party or even Super bowl Sunday! It had a great kick to it, totally tasted like Buffalo Wings but way more healthy! I could eat this all day – and who does’t love a great dip?! I know I do!

Thanks to Rachael Ray for the inspiration!
