Seriously, who doesn’t love a good crock pot meal? I know I do! I love tossing a bunch of ingredients into the pot and coming back hours later to a delightful meal. It’s the best!
Tonight’s meal is another Iowa Girl Eats creation – I swear I make one of her recipes AT LEAST once a week. I can’t get enough!
Here is how this soup was born:
I started out with a potato – peeled & chopped
Add some chopped up carrots
Can’t forget the celery.
And an onion.
Next pile in 6 oz. of Canadian bacon
3 cloves of garlic
4 cups of chicken broth
And it beings to look like soup!
Next 1/2 cup barley gets added in
And finally some thyme, bay leaves, sale & pepper.
Then sit back & relax while the crock pot does the work!
Cook the soup on low for 5-6 hours until the potatoes are creamy & the barley is tender.
When it looks a little something like this, it’s time to eat!
Serve & Enjoy!
This was a very tasty & delicious meal. Lots of veggies inside & Charles loved the addition of the bacon. I have never cooked with barley before but I really liked it. I would definitely make this meal again!
