Tonight’s dinner featured Thai Green Curry simmer sauce from Trader Joe’s. I saw it in the store the other day and knew I had to try it! I have a new found love for all things curry – I have been enjoying it at some of my favorite restaurants, drooling over guest blogs about it, and even creating something similar at home.
I am officially on the curry bandwagon!
Tonight’s curry creation seasoned some of my favorite veggies – onions, chickpeas, green peppers, cauliflower, corn and sprouts!

I made a ‘man plate’ for Charles – with a nice piece of chicken on the side – the veggies are growing on him, but the man needs some meat!
I made my meal festive and enjoyed it with chopsticks! Isn’t everything a little more fun with chopsticks?!

The Trader Joe’s simmer sauce was pretty good, but I enjoy my spicy thai peanut sprouts much better!
After dinner I was trying very hard to keep my Operation Hot Bride status in check, but my sweet tooth was screaming at me – so I dug into my freezer and pulled up these little babies!
It was the perfect evening to make raw banana soft serve – an old favorite of mine brought back to life!
I added a scoop of almond butter and a few chocolate chips for good measure.
Every night should taste this good!
