Healthy Living Summit Eats

If you are a healthy living or food blogger I am sure you are well aware of the Healthy Living Summit that took place this past weekend.

This was my first year in attendance, last year I watched everything unfold from the first summit online, on twitter and on everyone’s blogs. Last year I felt bombarded like I was sort of reading the same post 50 times on everyone’s blog because all my favorite bloggers were all in the same place doing the same thing!

Since this was my first year going myself, I want to share with you what sessions I attended and what I learned from them, but I want to take a few days to step back and digest this amazing weekend!

For now I will leave you with some of my favorite eats from the Healthy Living Summit, because let’s be honest, it’s not much of a summit without some awesome eats!

We started off the HLS with an amazing breakfast from all the sponsors. I was most excited to check out the Quaker Oatmeal Bar!

I was also excited so snag a bag of adora calcium supplements! I have been reading about these for a while and was pumped to try one out!

HLS 116

I enjoyed a nice big bowl of oats with all the fixin’s with a side of grapes, yogurt, orange juice and a calcium chew!

HLS 118

It was a beautiful way to start off the summit!

Then I spent the rest of the morning enjoying some lovely sessions

After another session it was time for lunch!

There were so many yummy things to choose from.

HLS 125

I was particularly excited about the chickpeas

And the quinoa and edamame! YUM! HLS 127 HLS 128HLS 129

I had a little bit of everything.

And split some yummy desserts!

Everything in moderation! Don’t be afraid to treat yourself!

Then it was back to learn some more.

And before I knew it, it was time to eat again! One thing we weren’t lacking at this conference was FOOD! There was so much food everywhere. Everything looked so good but by the end of the day I was seriously stuffed.

The afternoon break was sponsored by Athenos.

 HLS 137

Lots of feta

HLS 133

And hummus!!

 HLS 134

Athenos was really creative with their snacks. Everything was almost too pretty to eat! ALMOST.

Sunday morning we had a breakfast sponsored by Thomas with a focus on their new bagel thins. These things are very yummy!

HLS 313

We also had a big fruit spread to enjoy.

HLS 312

My favorite part of this breakfast was that we got to Make Our Own Cream Cheese! How fun is that?

HLS 320

There were sweet and savory options to choose from. I opted for the sweet choice and chose to add strawberries, honey, almonds and cinnamon to low fat cream cheese.

It turned into a very yummy creation!

HLS 322

I paired it with a bagel thin and some fruit.

 HLS 323

I will definitely be recreating this at home! It was tasty and delicious – a great way to spice up breakfast!

  HLS 325

So those were some of my favorite eats from the weekend. I will be posting my HLS recaps later this week along with some other fun I had in Chi Town!
