I started reading blogs for the food. It was all about the food from the beginning. The majority of the blogs on my Google reader are all food and recipe related (the rest is all running!). I love coming up with new food creations and also recreating other meals I see online.
Tonight’s dinner is another meal inspired by the lovely Caitlin. The last time I used one of her recipes I ended up with an awesome Santa Fe Casserole. It was amazing and I expected nothing less this time.
Tonight’s Menu - Caitlin’s Flax-Encrusted Sweet Potato Balls
Ingredients (serves 2):
- 1/2 cup black beans, drained, rinsed, and patted dry
- 1/2 medium baked sweet potato, mashed
- 5 tablespoons salsa
- Generous amount of ground flax seed
I added the sweet potato, black beans and salsa into a bowl and mashed everything together. This combination is the essence of the balls. I love all three of these foods! Yum!
For the salsa I used Don Sabrosa’s Black Bean and Corn in mild.
All mixed together.
Form little balls with the salsa and sweet potato and bean mix. Then I rolled them in some Flax Matters flax. Love this stuff!
Bake the flax encrusted balls in the oven at 350 for 30-45 minutes
Sneak a peak and rotate the balls once.
Serve and enjoy!
How pretty does my plate look?
I squeezed some lemon juice on the balls and the asparagus. It was yummy and gave a little flavor.
I also poured some mustard on the balls, they would be great dipped in some plain green yogurt as well!
It was a meal fit for a healthy Queen!

i don't know if i'd make it. it looks good, but i don't know if the taste buds would be keen of it. even though i do enjoy salsa, sweet potatoes and black beans.
I love sweet potatoes, but maybe not the black beans in it. Did it taste good? Did fiance like it?
Hmmm… what's green yogurt? I saw this recipe on Caitlin's site and am planning to make it this afternoon.
I get ya now… greek yogurt! I made these (they're still in the oven), and I ate the same thing but not mashed together. Just beans and salsa over the remaining half with greek yogurt on top. Delicious! What a brilliant combination!
