So my Snow Dance worked! My class tomorrow is cancelled and as of right now I am off work! YAY! As of 7:21 pm snow has yet to hit Philadelphia, but I am sure that will all change in the near future. So I am looking at a beautiful day off tomorrow! I don’t want to jinx it, but I can’t wait to sleep in a bit and tackle my massive to-do list!
Here’s hoping tomorrow will be a beautifully productive day!
Anyways, when I got home today I had a few ideas for what I wanted to make for dinner. I have a fridge full of produce and I wanted a veggie filled meal, so I went to work pairing some stuff together.
I ended up with a bowl full or Brussels sprouts and chickpeas (seasoned with lemon, like the other day), some cauliflower, snap peas and onions. It was green and beautiful!
I also added some spinach and feta sausage from Applegate Farms!
When fiancé came home I gave him a few options for seasoning and he picked what I was leaning towards - the curried red lentil soup which was sent to me from Pacific Foods. I have never seasoned or flavored a meal with soup before, so I didn’t know what to expect, but I had high hopes!
The soup as a flavoring was surprisingly fabulous! It gave the veggies a little flavor kick but it wasn’t overwhelming.
The curried red lentil was just the right amount of spiciness. Fiancé just said it was a great “flavor infuser!” I love his little reviews. I can’t wait to try the soup just as soup!
I was going to add some pasta to this mix, but then decided against it. The meal was so much better with just the veggies, at least for me. Fiancé said he still missed the pasta a bit at first, but then he said the meal didn’t need a filler. WIN!

I also enjoyed a lovely glass of red with my meal. It’s what we DO in Philadelphia when snow is coming – – we embrace the winter weather with alcohol!
Do you drink when it snows?
After my meal, in clear chocoholic fashion, I needed my chocolate fix. I grabbed a NibMor bar that was sent to me to try as well. I had my NibMor bar in the freezer, because my favorite way to eat chocolate is frozen!
It was great to pair my chocolate with my red wine! Do you like chocolate and wine together?
I tried the Dark Chocolate Almond flavor and I must admit that usually dark chocolate isn’t my favorite. I am making an effort to eat it more and try different types because I know its better for me.
I love this bar! It’s organic, vegan and raw! It is also dairy, gluten and GMO free, all natural with no refined sugar. It also tasted amazing. The hint of almond was fabulous and the chocolate was full of good flavor, without being overly sugary tasting! It was yummy! I had a little square off the bar. Perfect size for filling my chocolate void!
I also loved the top of the bar packaging!
And the bottom! WIN!

Your Brussels sprout dishes always look so good. I've never considered using a soup to season a dish. I'll keep it in mind!

First I would like to say that the other day when I said that St. Louis has not had that much snow, maybe I should have waited a little before I said that, we have snow now. So the workouts have moved to the gym. I think drinking red wine is a great thing to do when you have a snow day, or any day.
it sure is snowingggggg right now. yay for no class and work. i also am basking in having off from work. quite lovely.
