Slow Cooker Pumpkin Chili

Tonight I came home from work and was totally motivated to make dinner. I always have ingredients for chili on hand, its one of my favorite things to make. Lots of veggies and tons of flavor, I can’t get enough!

I combined in my slow cooker: 1 can kidney beans, 1 can chickpeas, I can sweet corn, 1/2 can Dei Fratelli petite diced tomatoes, 1 packet Amazing Taste chili mix, 1 1/2 small green peppers, 1/2 red onion, 1/2 bottle beer and 1 can pure pumpkin

While that was cooking in the slow cooker, I made some Trader Joe’s cornbread. It had actual corn kernels, which I had never seen before in a cornbread mix.

35 minutes later, the bread was all ready to go! Mmmm…corn bread!

The fun thing about this chili was that I made it a little different than I usually do, hence the pumpkin. I didn’t tell fiancé about the change. Sometimes I like him to find out surprises like this on the blog, to keep him on his toes! Is that evil? Muahaha! SURPRISE!

I loved the pumpkin chili! It was amazing with a subtle sweetness! Pure chili perfection!   pics 919

Is it weird that the cornbread tasted a little bit like cake?  Is it even more weird that I liked it! Who knew cake + chili was fabulous! haha!pics 923

I topped it with cheese and some sour cream! It was a fabulous meal on a lovely Tuesday night!    pics 926

    Well I guess the answer is nothing , I usually don't eat chili, anyway it looks deliscious and the way you describe it just make me "chili hungry" :), keep it safe! :)…

    I will be making that when I get home from this next debate trip. I make a mean lentil chili but have not tried a pumpkin chili. Thanks!

    I picked up that corn bread in TJs the other day but put it back down. Maybe I should pick it up again next time!

    I've made pumpkin chili before. I thought it was good and you couldn't taste the pumpkin. Pumpkin is so versitile.

    i made pumpkin chili about a month ago and it was sooo good! and the best was that there was SO much left overs! loved it…that corn bread looks like a great addition (i took note :))

    I have never tried chili BUT I might try pumpkin chili! I love the slow cooker and always looking for recipes.. This one went into my file 🙂
